For the bread dough:


For the country bread, mix rye flour, yeast and water until a smooth dough. Cover the bowl with foil and let it rise for 16 hours.

Mix this “sourdough” with oil, milk, salt, the spices and half of the flour. Beat the dough vigorously, adding the remaining flour little by little.

When the dough is properly kneaded, form 2 loaves, place on a baking sheet lined with parchment paper and let rise until double in size (about 1-1.5 hours).

Brush the loaves with water and sprinkle with the remaining caraway seeds. Bake for about 1 hour.
