Beat the egg (set aside a little for coating) with the curd, vanilla sugar, powdered sugar, lemon zest, cinnamon and elderflower (rubbed) and mix well.
Cut the strawberries into pieces and mix them in. Spread the puff pastry on the baking sheet, divide into 15 pieces with the pastry wheel (length 5 rows, width 3 rows).
Divide the filling among the pieces (put it in the center) and twist each opposite end together.
Brush with the remaining egg and bake according to instructions.
