For the vegan citrus cream, first grate the zest of the lemon and orange. Bring rice milk to a boil with cinnamon, vanilla, orange and lemon zest.

Dissolve cornmeal in less cold milk, stir into boiling milk while stirring constantly. Pour into small bowls and refrigerate for about 3 hours. Caramelize the vegan citrus cream with sugar.
