For the cream of asparagus soup, clean and wash the asparagus, remove woody parts and peel the white asparagus.

Cut each spear into bite-sized pieces. Cut the tips in half again lengthwise and set aside.

Melt butter in a saucepan, dust with flour, let foam and deglaze with vegetable stock.

While stirring constantly, add milk and whipping cream and season with salt, pepper and nutmeg.

Add asparagus pieces, continue to simmer soup until tender, then puree.

Add asparagus tips, bring to the boil again and season the cream of asparagus soup with salt, pepper and nutmeg before serving.
