For the Chinese Egg Noodles with Peppered Chicken Breast, boil plenty of salted water in a large pot and cook the egg noodles in it according to instructions (4-5 minutes) until al dente. Meanwhile, cut the chicken breast into fine strips. Season with salt and cracked pepper.

Heat the peanut oil in a wok pan and quickly stir-fry the chicken breast strips in it. Remove and keep warm. Finely chop the shallot, garlic clove and ginger and stir-fry everything with the pineapple cubes for 1 minute.

Mix in the chicken breast strips and season with soy sauce and chili sauce. Drain the egg noodles cooked al dente, drain and mix in. Serve the Chinese egg noodles with peppered chicken breast in small bowls or deep plates.
