Dice the poultry meat. Carefully rinse the strawberries in sufficient water and drain well in a sieve. Remove the stalks. Cut the strawberries in half, place in a large enough bowl, sprinkle with sugar and pepper and mix gently. Sprinkle with vodka and let stand in a cool place for 10 minutes.
Whip the cream until not quite stiff, fold in the mayo and season well with salt and freshly ground pepper. Rinse lettuce leaves, dry and spread out small plates with them in portions. Mix the meat cubes into the strawberries and then divide evenly among the plates. Garnish the lettuce leaves with the sauce or bring the sauce to the table separately.
