Make the potatoes, peel them and press them through the potato press while still warm. Chop the onion and fry in a little oil until golden.

Remove from the frying pan and drain well.

Cut the cheese into small cubes. Pluck the parsley leaves from the stems and chop. Whisk the milk and eggs. Pour over the breadcrumbs. Mix well and toss well.

Mix the potatoes into the bread crumb mixture. Add 3 tbsp flour, salt and nutmeg (freshly grated). Mix well. Finally, add onion, parsley and cheese cubes. Form into small loaves and fry on both sides in hot oil until golden brown.

The Kasknödel can be served with a hearty beef soup. They are also delicious with warm Vogerlsalat or cabbage salad.

Another possibility: “refine” sauerkraut with a little rendered bacon and offer it with the Kasknödeln.
