For the gingerbread, first sift flour and baking soda. Add the remaining ingredients and knead everything into a smooth dough. Wrap in plastic wrap and let rest in the refrigerator for several hours, or preferably overnight.

Preheat the oven to 170 °C. Line a baking tray with baking paper.

Roll out the dough on a floured work surface. Cut out cookies with desired shapes and place on the baking sheet. Brush with milk and bake for about 10 minutes.

Remove gingerbread cookies and store in a cookie tin until ready to use.
