For carrot noodles with peppers, heat the peanut oil in a pan and sauté the onion until translucent.
In the meantime, cut the carrots into “noodles” with a peeler. Then add the peppers and carrots to the onions in the pan and saute for 3 minutes.
Add soy sauce and sherry to the pan and season with salt and pepper. Simmer everything well and leave on the stove for another 1 minute.
