For the breaded celery slices, first peel the celery tubers and cut them into slices about 7 mm thick. Then boil them in water until they are cooked (they should not be too soft, as they will still be breaded).
Then remove the slices from the water and season with paprika powder, salt and pepper.
Beat the eggs. Add the seasoned slices to the egg and coat the celery slice with egg on all sides. Then turn the slices in bread crumbs and fry in clarified butter until golden brown. Serve the breaded celery slices hot.
