Instructions:

For the boiled medlars, first squeeze the lemon and put it in a bowl with the half liter of water.

Peel the medlars with a peeler and cut away the flower base. Remove the seeds and immediately add the pulp to the lemon water to prevent discoloration.

Add the sugar to the lemon water and the apple juice and bring to the boil.

Simmer until the fruit is cooked but not broken. This takes about 5-10 minutes.

Then pour the medlars together with the cooking liquid into twist-off jars, close immediately and turn the jars upside down for about 10 minutes.

Then let the cooked medlars cool in the jars and store them in a dark, cool place.
