Pork shank rinse, rub dry and cut the pork rind into squares (very sharp kitchen knife). rub with salt, pepper and caraway. Preheat the oven to 200° Celsius. Place the stilt in a roasting pan, pour about a quarter of a liter of boiling hot tap water, add juniper berries and roast for 2 to 2 1/2 hours. Pour beer in between. The pork rind must be crispy brown. Pour the bouillon over the gravy and add the sour cream. Season with paprika powder. Bind if necessary and season with salt and pepper.
