Make water and sugar together for 10 min, then cool syrup. Mix together sparkling wine, sugar syrup, basil and juice of one lemon until the whole foams, liquid solidify in the icebox, evt. Spread evenly in the mold for the ice cubes. Blend in hand mixer before serving.
The basil sorbet can be served as an aperitif or between courses.
