A simple but delicious cake recipe:
1. melt fat at low temperature. Mix flour, sugar and baking powder. Add egg yolks and fat and knead everything together into crumbles. Leave crumble to cool for about 30 minutes with lid closed.
For the curd mixture, separate the eggs. Mix fat, sugar and vanillin sugar until creamy. Add egg yolks, curd, juice of one lemon and semolina and stir. Whip the egg whites until stiff and fold into the curd mixture. 3.
Spread the crumble evenly on a greased baking tray and press smooth. Spread apple compote on top. Pour the curd mixture on top and spread smoothly. Bake in a heated oven (electric oven: 200 °C / convection oven: 175 °C / gas mark 3) for about 45-50 minutes. Dust cake with powdered sugar shortly before serving.
