Finely dice kohlrabi, peppers, carrot and zucchini.

Chop parsley and mix with cream cheese until smooth. Season mixture with salt, juice of one lemon, cayenne pepper. Fold in diced vegetables.

Cut bagels horizontally in half. Place a lettuce leaf on one half. Spread vegetable tartar evenly on top. Cover with the second half of the bagel.

Tip: The flesh of young, small zucchini is much more tender than that of larger ones.
