For the bitter orange confection, prepare the almond marzipan by finely grinding the almonds in a food processor. Add the honey and run the machine until a lump is formed.

Alternatively, for browned almond marzipan, toast the peeled almonds in the oven beforehand. Use finely ground hazelnuts instead of almonds, this makes a very good hazelnut marzipan)Chop the bitter orange in a blender, add the marzipan and knead well together.
