For the apricot compote, hold the fruit briefly in hot water, peel, halve and pit.

Steep the apricots in loiter sugar and simmer, but do not let them become too soft.

Pour in a little white wine and let everything cool down together.

Serve the apricot compote while it is still warm, or put it in preserving jars and refrigerate until ready to use.
