Peel onions and cut lengthwise into strips. Heat oil in a large saucepan, pour in onion strips and sauté over low heat.

Sprinkle sugar over top and caramelize in Two min, stirring throughout.

Add vinegar and evaporate completely.

Pour wine and liqueur and season with salt, cloves, cinnamon and pepper.

Simmer everything for about 20 min until there is almost no liquid left in the saucepan. Cool onions and fill into jars.

Caramelized onions taste great with poultry and white meats. They keep well refrigerated for about two weeks.

Tip: After chopping onions, rinse your hands with the juice of a lemon and the onion smell will disappear.
