For the apple-celery salad with shrimp, first For the dressing, put all the ingredients in a jam jar, seal and shake vigorously.
Wash apples, cut into quarters and cut out the core. Then cut fine sticks from the quarters and store them temporarily in lemon water. Cut off the root of the celery, pluck off the leaves, wash the stalks well and then peel them (as with the rhubarb: simply peel off the skins and coarse fibers with a small knife). Using a peeler, peel the stalks lengthwise into strips.
Pat the shrimp dry and sear in a little olive oil for 1 minute on each side. Season with sea salt and coriander seeds.
Season the celery and apple sticks well with the dressing. Arrange loosely on a plate, arrange the shrimp on top and alongside, and garnish with garlic sprouts and chive blossoms. Drizzle apple celery salad with shrimp with a little dressing.
