Cut bacon and onions into small cubes. Fry bacon in a little bit of oil, then add onions and cook until translucent.
Rinse sauerkraut in colander and add without much draining. Bring to a simmer over medium heat. Season to taste.
Later, add the wine (can be more!) and continue to simmer on low heat.
After about 1 hour ready. But as you know, it tastes much better warmed up!
An apple goes just as well with it.
Serve with selchkaree and a pilsner!
Our tip: Use bacon with a fine, smoky note!
