For the marshmallows, first soak the gelatin in the water. Mix the powdered sugar with the starch. Oil a shallow square mold and dust it thinly with the powdered sugar and starch mixture.
Place the granulated sugar and dextrose in a saucepan along with the water. Bring to a boil and stir until the granulated sugar is completely dissolved. Stir constantly so that nothing sticks to the pot.
Stir in the soaked gelatin until it has dissolved into the sugar mixture. Add vanilla flavoring and a little red food coloring if desired to give the marshmallows a pink color.
Beat the egg whites until stiff. Now gradually stir in the sugar mixture into the beaten egg whites.
Pour the marshmallow mixture into the lined mold, smooth it out and refrigerate until the marshmallows are set (about 2-3 hours).
Then sprinkle the work surface with the remaining powdered sugar and starch mixture. Turn the marshmallows out onto it and cut into even squares. Dust the squares generously with the mixture on all sides so that the marshmallows do not stick together.
