For the pancakes with red lentil curry filling, first wash the red lentils and drain. Finely chop the onion and fry in coconut oil.
Cut the carrots into small pieces and fry them. Squeeze in the garlic cloves. Add cumin, curry powder and lentils and fry briefly.
Add lemon zest and deglaze with wine vinegar. Add water and cook the lentils until soft. Keep adding water as needed. The lentils should really boil away and form a creamy filling.
Add salt, taste and season if necessary. The red lentil curry filling is enough for 4 pancakes.
