Peel apples and cut into small cubes. Melt some butter, add apples and steam with cinnamon, clove powder, allspice and sugar.
Meanwhile, in another pan, fry the breadcrumbs in a little butter.
Now stir the breadcrumbs, hazelnuts and raisins into the apple mixture and bind with egg. Form small dumplings from the mixture and coat them in flour, egg and breadcrumbs and fry them in hot oil. Take them out and let them drain on paper towels.
For the must sauce, boil about 200 ml of must with sugar, cloves and cinnamon bark. Mix the remaining must with the eggs and cornstarch and pour into the hot must. Bring everything to the boil once, stirring constantly.
Cover with the prepared cider sauce and quickly serve the apple dumplings.
