Instructions:

For apricot-cherry compote, wash and pit the cherries and remove the stems. Halve and pit the apricots, additionally peel and puree half of the apricots.

For the syrup, bring all ingredients to a boil and boil down for about 3 minutes. Add apricot puree, cherries and apricot halves and simmer on low heat for 5-10 minutes.

Pour the apricot-cherry compote into small bowls, garnish with mint to taste and enjoy while still warm or well chilled.
