For the apple-onion lard, dice the onion and finely chop the garlic. Pluck thyme and marjoram leaves from the stems and chop finely. Peel the apple and cut into small cubes.

Heat 3 tablespoons lard in a pan and fry onions. Add garlic and apple cubes and roast briefly.

Heat remaining lard very slightly – it should be just creamy – and stir in apple-onion mixture, herbs, salt and pepper. Pour the apple-onion lard into prepared twist-off jars and seal tightly.
