Remove peel from apples, cut into quarters. Cut out core. Divide into small slices. Add grated lemon peel, candied ginger chopped very fine and sugar. Pour in a little water. Stew for 10 minutes until apples are soft. But they should not fall apart. Add raisins, season with a little lemon juice.
