Instructions:

Sauté onion in butter, add sauerkraut and fry a little, then cool. Form in a kitchen towel and squeeze heartily, then knead in egg yolk, flour and spices. Form into small meat loafs and inside form small pieces of cheese, roast in olive oil.

Cheese sauce: fry shallot in butter, mélange and pour milk. Whisk until smooth. Make 5 min. Then remove from the stove and mix in cheese, parsley and tarragon with a blender, then quickly bring to the table.
