For the zucchini rings with egg, cut three slices from a large thick zucchini. The slices should be about 6 cm in diameter and 2 – 3 cm thick.
Heat the oil in a frying pan.
Cut the center out of each of the slices with a round cookie cutter. Put the zucchini rings into the hot oil.
Beat eggs with spices and chopped chives. Turn the rings over, fill with egg mixture, turn heat to low, cover pan and let egg mixture set for about 4 minutes.
Serve the zucchini rings with egg as a savory appetizer.
