For the wholemeal apple strudel make the dough Sift flour on the work surface, make a well in the center. Sprinkle in salt, add oil and water by the tablespoonful, mixing all ingredients together.
Knead the ingredients together with your hands to form a smooth dough and let it rest in a warmed bowl for 60 minutes.
For the topping, wash the apples, quarter them, remove the core and grate finely. Rinse raisins, mix with apples, cinnamon, lemon juice and honey.
Roll out the dough and stretch it very thin over the back of your hand, place it on a tea towel. Brush with melted butter, spread the curd cheese evenly on top and add the apples on top.
Roll up the whole-grain apple strudel and place seam side down on a greased baking sheet. Brush with liquid butter and bake in a preheated oven for 40 to 45 minutes at 190 °C.
