For the spinach spatzln clean, wash, cook and strain the spinach. Then mix the flour, eggs, melted butter, milk, salt and spinach to a thick dough and press it through a spatzl sieve into boiling salted water.
Boil everything for 1 minute, then pour cold water over it and lift it out of the water with a sieve.
In a pan, toss the spatzln with hot butter.
