For the gooseberry chutney Roughly chop the onions, boil with a little water until soft and then drain briefly. Together with the gooseberries, raisins, sugar, ginger, cayenne pepper, salt and wine or herb vinegar boil down to a thick mass. Add the other vinegar and thicken a bit more. Pour hot into jars and seal well.Preparation tip:Put the raisins in a balsamic water mixture (1 : 1) and let them infuse overnight. This gives an exceptionally good taste!
