For the vegetarian falafel sandwich, cut the ciabatta in half and spread with the hummus. Cut the spring onion into fine rings, the cucumber into thin slices and spread on the bread.

Halve or slice the falafel, depending on size, and place on top. Mix the yogurt with chimichurri and the pressed garlic clove to make a spicy sauce and pour over the falafel.
