For the whole spelt Easter bread, dissolve the yeast in the lukewarm milk and add a teaspoon of sugar.
Put the remaining ingredients in a saucepan, add the milk mixture and knead for 5 minutes with a food processor.
Add more milk if necessary and knead for another 5 minutes. Cover the dough and let it rise in a warm place for about 45 minutes.
Knead again and then pour the dough into a large loaf pan lined with baking paper. Bake the wholemeal spelt Easter bread for about 35-40 minutes.
