Heat the milk to 35 °C, let the yeast melt in it and stir with the mixture of both flours. Leave in a warm place. Add the butter and mix it in. Now add the egg yolks, salt, sugar and semolina, followed by the very stiffly beaten egg whites and finally the lightly whipped cream.

Bake pancakes the size of a palm from this dough in clarified butter (pour the dough into the frying pan to a height of about 1/2 cm). You can keep them warm in the oven (80 °C).

Simply bake them in a medium-hot oven.

Tip: Instead of clarified butter you can use butter in most cases.
