Rinse the plums, remove the seeds and chop coarsely. Remove the skin from the ginger and the garlic clove, chop both very finely. Bring the brown sugar and 50 ml of water to the boil.

Add the plums, ginger and garlic. Cover the lid and simmer gently for about 30 minutes, stirring occasionally. Mash everything.

Clean, rinse and very finely chop the chili peppers. Stir into the plum sauce with the fish sauce and shrimp paste. Season with vinegar, salt and sugar sweet and sour and fill into jars on the spot.
