From the hard-boiled eggs, cut a piece on the round side. With a small spoon, the egg yolk is taken out so that the egg white remains undamaged. The grated onion is browned in the oil, the mushrooms are added and steamed until their own juice has boiled down.
Now add ham cut into small cubes, cognac, red wine, mustard and egg yolks. If necessary, a little breadcrumbs can be added to the quantity. Now fill the eggs with this amount. Put the cut tips on the eggs again and roll them in flour, egg and breadcrumbs. They are fried in hot oil.
