It is a paste that the southern Italians also like very much, either as a spread or as an ingredient for a bland paradeis sauce.
Put the capers in water for thirty minutes, let them drain and pat them dry with kitchen roll. Then mash them together with peperoncino and olive oil to a fine paste and put it in the jar.
