For the sour cherry cake, first wash and pit the sour cherries. Separate the eggs. Beat egg whites with granulated sugar (first mix without sugar) until stiff. Mix the egg yolks with the powdered sugar until foamy.

Add the butter and melted chocolate – continue mixing. Mix flour with a little baking soda and stir into the yolk mixture. Gently fold in the beaten egg whites.

Spread into a greased, floured baking pan. Spread the sour cherries on top and bake in the oven at 170 °C.
