For beef cutlets, cut the beef cutlets into strips. Season with salt and pepper to taste. Sauté shallot in olive oil, add beef cutlets and sauté.

Pour in beef stock, add bay leaf. Add capers and red wine to taste. Simmer for a total of about 1 hour on low heat until meat is completely tender.

Do not add mushrooms until about 40 minutes into cooking or they will be too soft. Arrange beef cutlets and serve.
