For the scallops, preheat the oven to 200 °C top and bottom heat. Rinse the scallops and pat dry. Grate lime zest, squeeze out juice.
Blend olive oil, garlic, lime zest and juice in a stand mixer until a uniform consistency is achieved.
Place one filo pastry sheet, brush with the spice oil, place the second sheet on top and brush again with the oil. Cut dough sheet into 4 squares.
Place 2 scallops on each square, fold dough over and twist edges together. Place the 4 packets on the baking sheet and bake for 15-20 minutes until golden brown.
Drizzled with the remaining seasoning oil, the scallops in filo pastry are an appetizer for 4 people.
