For the arugula salad, wash the arugula well and cut a little smaller.
Wash the tomatoes and cut into cubes. Remove the seeds.
Peel the garlic and press it through the garlic press.
Wash and finely chop the parsley.
Finely shave the parmesan.
For the dressing, mix the oil, lemon juice, garlic, salt and pepper to taste in a small bowl.
Arrange the arugula on a salad plate and place the diced tomatoes on top.
Drizzle the dressing over it.
Before serving, sprinkle the arugula salad with freshly chopped parsley and shaved Parmesan.
