For the pepper steaks, press the beef fillets into the crushed pepper on both sides. Melt butter and oil in a pan and sear the steaks on both sides.
Put the steaks in aluminum foil and let them rest. Add brandy to the pan with the gravy and reduce over high heat.
Stir creme fraiche or sour cream into the sauce and season with salt and pepper.
Arrange the pepper steaks with the sauce and serve.
