For the papaya and cucumber salad with shrimp, first mix all the ingredients for the dressing in a jam jar, seal well and shake vigorously.
Heat olive oil in a frying pan. Sauté shrimp in it for 30 seconds per side. Remove from heat and season with lemon zest, parsley, salt and pepper.
Put all the ingredients for the salad in a bowl and pour the dressing over them.
Divide among plates, place the shrimp on top and sprinkle the papaya and cucumber salad with shrimp with fresh mint.
