For the omelet with liver cheese, first beat the eggs and whisk. Cut the meat loaf into small pieces. Cut the onion into fine strips.

Heat oil in a pan and fry the pieces of liver cheese. Pour the eggs over them and let them set a little. Sprinkle the grated cheese, put onion strips on top and fry until done.

Season with salt and pepper and sprinkle with chives.
