Whisk well pepper, olive oil, salt, paprika, garlic and freshly removed thyme and marinate the meat pieces in it for about twenty minutes.
In the meantime: sauté long grain rice very lightly in a little bit of olive oil, add water (about twice the amount of long grain rice), season with salt and make.
Take the meat out of the marinade, put it evenly on the wooden skewers and roast it in a frying pan or on the broiler.
For the tzatziki, mix well the chives, parsley, yogurt, basil and garlic and season well with salt and freshly ground pepper.
Drain the cooked long-grain rice and arrange in an oblong shape on preheated plates. Using a piping bag or squeeze bottle, pipe tzatziki in a circle around the long-grain rice. If desired, drizzle another thin circle with balsamic syrup. Place the meat on top.
Our tip: It is best to use fresh herbs for extra flavor!
