Beat yolks with powdered sugar until creamy and light in color. Stir in breadcrumbs and almonds.
Beat egg whites with cornstarch until stiff. Fold the egg whites into the yolk mixture and grate the marzipan into the mixture.
Place one sheet of strudel dough on top, brush with melted butter, place second sheet of dough on top. Place half of the filling on top of the dough, brush side edges with butter, fold in, roll up into strudel. Brush the outside with butter. Prepare the second strudel in the same way.
Bake at 180 degrees for about 12 minutes. Peel apples, cut into small pieces, boil with wine, sugar and cinnamon. Remove cinnamon, puree apples, possibly season with amaretto.
