Cut the beef into cubes of about 40 grams. Boil the marinade with all the ingredients and cool. Marinate the meat for 2 to 4 days. Finely chop the carrots, onion and celeriac. Cut the lean bacon into sticks. Take out the meat cubes and fry them well drained in hot oil all around, dust them with flour and let them brown slightly. Add strained marinade and beef broth and steam for 1 1/2 to 2 hours. Steam vegetables and bacon until translucent and add to dish form. Bind with cream and season. Arrange the starter on a platter, cover with sauce and bring remaining sauce to the table separately.
