For the coconut-vanilla cookies, mix all ingredients in a bowl. Briefly test whether the dough is sweet enough. If necessary, sweeten with sweetener or stevia.
Preheat the oven to 160 °C convection or top/bottom heat. Spread the dough on the baking tray in the correct portions (approx. 8 dough blobs) and then bake for 15 minutes.
They should not bake through, so that they remain fluffy and juicy in the middle.
