For the vegetable mayonnaise, mix the mayonnaise with cooking cream, salt, pepper, mustard and soy sauce.

Boil vegetables and potatoes (not too soft), strain and mix cooled down with the apple and cucumber cubes into the mayo cooking cream.

Season vegetable mayonnaise to taste and add a little cucumber water.
