Make the basic muffin batter, but add the grated lemon zest to the flour. Rinse the apple, remove the core and cut into cubes with the peel in pieces of about 0, 5-1 cm. In a separate baking bowl, add the chopped apple and half of the lemon juice form and steep for about 10 minutes. Crush star anise seeds with the back of a knife and add to the apple mixture form. Mix the apple mixture well with the dough scraper into the basic dough and on the spot (the juice of a lemon reacts quickly with the baking powder) form the ready mixture into the muffin molds and fill to 2/3 and bake for about 20 min. long at 180 °C.
When the muffins are ready, the rest of the juice of one lemon is mixed with the powdered sugar and drizzled over the still warm muffins.
Tip: Sultana fans add about 100g raisins to the apple mixture.
